It’s my birthday day today!


Yay!

And Dan and I regards birthdays as a new beginning.


A birthday is the first day of another lovely year, A year of new tomorrows that is shining, bright and clear.


So, now it’s time for me to face the beginning of a brand-new additional year to my life.


I can’t believe it?

When you are going through a transition, your mind expands in way that it hadn't done in the past.


You find out about what you can handle and what you can't.


You learn about your limitations.


You figure out what you are really made of.


Learning about yourself, including what you cannot handle, helps you to figure out a better path to take in life.

You are open to the possibility of learning that what you have been doing in the past isn't suiting the future.

OPTIMIZE YOUR COMMUTE


Commuting can be stressful, especially in the rush hour.


Choose a time, means and route that take the pain out of your journey.


This might mean spending a little more time; for example, going by bus and not by train for the sake of getting a seat.

Even getting there early.


Consider having breakfast after your commute rather than before.


This is an aspect of work you can control, choose wisely.


If you go by car, try to organize a car share, not least for the sake of the environment.

CHAPTER 12; FIGHT FAIR WITH UNFAIR PEOPLE

Arguments are not logical, SUP’s change their argument in midstream; do a complete turnabout, if necessary to keep the upper hand.


They disregard and disparage.


They deny they said or did what you know they said and did.


Their comments make it clear that they believe you are not able to understand the issues as they can.

Last year, Dan and I have been posting, this is the time to get ready for food and remedies that heal; alchemy of herbs.

It’s amazing what and how rose can help keep your body healthy?


Ready for another recipe using ROSE!


Well, what about – ROSE HIP-CRANBERRY COMPOTE.

Compotes are stewed fruit with spices and are a simple and delicious way to create a fruit-based dessert.


This particular recipe is often signifying the coming of winter and the holiday season.


Cranberries are a wonderful source of antioxidants and deserve to be eaten in more than one meal a year.


The apple may be peeled or not, it’s up to you.

Ingredients:


3 cups chopped apples, about 3 medium apples

2 cups fresh cranberries

1/3 cup dried rose hips, with seeds removed

1 tablespoon lemon juice

1 tablespoon lemon zest

1 cup of apple juice

½ cup pomegranate juice

2 tablespoons grated fresh ginger

2 teaspoons cinnamon powder

½ teaspoon freshly grated nutmeg

¼ teaspoon ground cloves

¼ cup honey or sugar, or to taste

Freshly whipped cream – optional

Instructions:


1. Place the fruits, rose hips, lemon juice, lemon zest, apple juice, pomegranate juice, and ginger into a pan.

2. Bring to a boil.

3. Reduce the heat so the mixture is at a low simmer.

4. Continue to simmer for 20 minutes, stirring occasionally to prevent burning.

5. After 20 minutes the fruit should be soft and the mixture will look jelled and cooked down.

6. Add the spices and the honey.

7. Taste and add more honey if desired.

8. Stir for another 2 minutes, then remove from heat.

9. Serve warm with whipped cream, if desired.
