A Sicilian delight!


Sweet and sour eggplant stew with tomatoes, capers, and olives.



✨ Ingredients:


• Two eggplants, cubed

• One onion, chopped

• Two tomatoes, diced

• 2 tbsp capers

• 1/4 cup of olives


🔥 Instructions:


One️ Sauté onions and eggplants in olive oil until soft.


Two️ Add tomatoes, capers, and olives.

Cook for 10 minutes.


Three️ Simmer until flavors blend.


Serve warm or chilled.
